"Love Man" off the Dirty Dancing Soundtrack is very effective for loosening guys up. Think "FUN". Flirty helps too. Try to move with him. Smile at him, say "Spin me" and WAIT for him to do so. Negative reinforcement NEVER works, so enjoy yourself and say nothing critical. The real trick to getting your fiance to love dancing is to show him that it is as fun as driving a Jag or playing a video game.
